Best Fresh Thai Green Curry Paste

Thai green curry paste is quick and stress free to make, as a chef I know it on an intellectual level it keeps for weeks, as a taster, it gets eaten every time no matter how much I make. Add it to pork, chicken, beef, prawns, scallops, noodles, vegetables and tofu. Its uses are only limited by your imagination.

When buying fresh lemongrass look for stalks that are fragrant, tightly formed, and with a lemony slightly green color near the bulb, then turning to a truer green at the end of the stalk. Never buy lemon grass if is brown, because this indicates that it is old dry and past its best. The part that you need to cook with is less than a third of the part that you buy; it is the fleshy inside part. Discard the tougher outer leaves, and use only the easier to slice center.

Thai green curry paste

Ingredients

6 Spring onion or 2 shallots,
2 pieces of lemon grass chopped,
2 or 3 cloves of garlic, peeled and left whole,
1 1/2 tablespoons of fresh ginger,
Zest of 2 limes,
4 green chillies,
Handful of Kaffir lime leaves chopped (substitute the juice of an extra lime if unavailable)
2.5cm/1in piece galangal, peeled and chopped (if available)
4 handfuls of fresh coriander
4 handfuls of Thai basil
1 1/2tablespoons coriander seeds,
Sea Salt
Black pepper
Juice of 4 limes
3 tablespoons oil

Method

Blend the green Thai spices together except the herbs, until soft, then add the herbs for the last few seconds. Lightly coat the chicken breasts and leave in the fridge for an hour. Don't add too much marinade because it will boil when cooked. Stir fry for three minutes to colorize, and add the rest of the Thai green paste, and add a tin of coconut milk and simmer for ten minutes.

When your curry is cooked, if it is too spicy, add some more sugar; if it isn't spicy enough, fry a little more curry paste in some oil and add it to the sauce.Serve the curry with noodles or jasmine or basmati rice.

Try This Old Fashion Quick and Easy Comfort Food Meal Featuring a Tuna Casserole

These recipes are from my vintage recipe collection. They are quick, easy, and offer comfort to the family on a tight budget. Make your family this comfort food meal featuring Virginia's Macaroni Tuna Casserole, which has pasta, dairy, soup, tuna, and vegetables all in the one dish. For a different salad option make this Cabbage Salad with Cooked Dressing. Both of these recipes are from my childhood, growing up in Southern Indiana. We may not have been rich but we were always rich with lots of good food.

MACARONI TUNA CASSEROLE BY VIRGINIA

8 oz shell macaroni
1/2 cup shredded American cheese
1/2 can cream of celery soup
1 can chunk style tuna, drained
1 box frozen peas
1/4 cup butter
1/4 cup milk
2/3 cup crushed potato chips

Cook macaroni for 6 minutes after it begins to boil. Put frozen peas in a colander When the macaroni is cooked, drain by pouring the water over the frozen peas. Place both the macaroni and peas in a large bowl. Add the tuna, cream of celery soup, butter, milk, and cheese. Mix together well to combine. Place in a buttered casserole dish. Sprinkle top with crushed potato chips. Bake in a preheated 375 degree oven until heated through.

CABBAGE SALAD WITH COOKED DRESSING

1/2 cup sugar
1/4 tsp salt
1 tsp all-purpose flour
5 tbsp pineapple juice
3 tbsp cider vinegar

In a small saucepan, combine all the above ingredients. Bring to a boil over medium-high heat and boil for 5 minutes. Remove from heat and allow to cool.

1 small head of cabbage
1 cup miniature marshmallows
1/2 cup crushed pineapple, drained

Shred cabbage and pat dry with paper towels. Add the marshmallows and pineapple. Toss mixture with the cooled dressing until well coated.

While you will find it served in many restaurants across the globe, many people feel that cooking octopus at home requires a lot of skill.

Octopus can be cooked and eaten in various ways. Asian countries use it mainly as sushi, while Mediterranean countries such as Italy, Greece and Malta cook it for salads, stews, pasta and also as a stand-alone appetizer.

The most important thing that you need to keep in mind when cooking octopus is that its meat is extremely tough when raw. It may not look like it, but it definitely is!

So in order to get a tasty octopus meal, you need to tenderize the meat before you cook it.

Freezing the octopus for a few days before cooking it, is one way of doing this. Another way is to boil the meat for a couple of hours before you proceed to cook it.

Some resort to beating the octopus against a very hard surface such as a table. In some Mediterranean fishing villages, you will actually see fishermen beat the octopus against the rocks as soon as they catch it. Others prefer to cook the octopus slowly for many hours until it becomes tender.

To see whether the octopus has become tender, you need to pierce it. If the utensil that you're using penetrates the meat with little resistance, then it means that the octopus is tender enough.

In order to give it a more palatable flavor, the octopus can be simmered in wine or olive oil.
