When Outside Isn't an Option - Indoor Grilling

When the weather is gorgeous outside, having family & friends over for a delicious barbecue party sounds great, right? Most people prefer grilling outside during the nice weather. But, what if outside isn't an option due to bad weather or whatever the reason is?

This is where indoor grilling comes into play. Indoor Grilling is becoming more popular every year in the United States. Because indoor grilling is easy, affordable, and you can grill all year around without worrying about the weather.

Most prefer electric grills because they are easy to setup and clean. Most electric grills are dishwasher safe. You can simply remove the plates, and wash them in a dishwasher after a delicious home cooked grill. In general indoor grills can be categorized as contact grills & open grills.

Contact or Open Grill

Contact grills are two sided, therefore cooking faster than open grills, and you don't need to flip the food. Contact grills can also cook paninis, appetizers, and whatever else you can think of.

Open grills don't have the top plate, some of them come with a lid, and some of them don't. Similar to outdoor barbecue grills, they require you to flip the food to evenly cook both sides. If you get an open one, we'd recommend getting one with a lid on. This way, the lid will keep the steam within the grill and make the food cook evenly. You can even cook a whole chicken with an open grill which has a lid.

How to Start Grilling Indoors


Purchase an indoor grill of your like. We'd highly recommend an electric contact grill.
Use your favorite barbecue recipe.
And simply put the prepared food on the indoor grill, adjust the heat level and start grilling.

Concert in the Park - Easy Dinner Recipes and Dinner Ideas For Family Fun

Concerts in the park are a great source of cheap family entertainment in the summer. Choices range from the local high school band concerts to full scale professional artists performing on local outdoor venues. In our area a local winery hosts great outdoor concerts that are enjoyable for all ages. Check your community newspaper and event pages for local events, times and schedules. Plan some easy dinner recipes and pack up a delicious family feast. It's a great way to reconnect with neighbors and friends you don't see that often and the music and entertainment are great too. They are great concerts to take the kids to, because they can play on the grass if they get bored. Try to station yourself near the playground equipment so you can keep an eye on the kids and an ear on the concert at the same time.

In this picnic, I've planned a pan bagnat, a French tuna sandwich that is delicious and perfect for picnics and outings. This easy dinner recipe comes together in minutes, but will hold for hours in a cooler and only gets better as the flavors meld. Bring some crostini and olive tapenade or hummus for spreading as a great easy appetizer. Cold crunchy pickles or green olives or kalamatas would be delicious too.

What to bring:

1) Folding chairs

2) Jackets

3) Beverages! A chardonnay would be lovely the pan bagnat, or if you prefer a red, try a merlot or a pinot noir. Bring juices for the kids and plenty of water, especially if it is a sunny day.

4) Sunscreen - a must for summertime whether it is sunny or not. Sometimes those cooler days can surprise you with a sun burn.

5) Bug spray - after the sun begins to set, the mosquitoes may come looking for you.

6) A plastic tarp in case it rains or the ground is wet.

Easy Recipes:

Pain Bagnat

This is a French style tuna sandwich. I love it for a quick summer dinner. It is also great to make ahead - it only gets better. It is wonderful to take to a picnic, because there is no mayonnaise.

Serves 4

Ingredients

1 lb French bread loaf about 14 inches long
2 Can Tuna - 6 oz - preferably in oil
1/4 C Olive oil
1/2 C Basil - fresh
2 ea Tomatoes, chopped
1/2 C Kalamata olives, chopped
1/4 C Capers, rinsed

Instructions

Slice the bread in half horizontally. Brush the bread with olive oil and layer with basil leaves. Open the tuna, but do not drain it. (If using tuna in water instead of oil, drain and add 2 TB olive oil). Combine remaining ingredients and layer into the sandwich. Wrap very well in plastic wrap and press down hard with a skillet. This gets the juicy goodness into the bread. Some have suggested sitting on the sandwich, but we will not go there. Now if you are taking this sandwich somewhere it is ready to go, remember to pack a knife to cut it. Otherwise, you can unwrap and slice to serve immediately. This sandwich is great made in the morning for a quick grab on your way out to the ballpark. Enjoy!

Easy Three Bean Salad

Great accompaniment to any meal. Will stay in the refrigerator for up to one week in a tight lidded container.

Serves 8

Ingredients

1 Can Kidney beans - 15 oz, rinsed and drained
1 Can Black beans - 15 oz, drained and rinsed
1 Can Chickpeas - 15 oz, drained and rinsed
1/2 C Parsley - fresh, chopped
1/4 C Olive oil
1/4 C Balsamic vinegar

Instructions

Combine all ingredients and toss. Cover and chill.

How to Make Vanilla Extract

You can easily make your own vanilla extract. All it takes is a few key ingredients and a long wait. Patience has its rewards though, and in this case, you'll be able to make more flavorful and delicious cakes, cookies and other desserts with the addition of it.

It all starts with the vanilla pod or bean. Choose vanilla pods that have a deep dark brown color. They should also be pliable enough that you can wrap it around your finger, without it breaking.

To start making the extract, first, split a clean vanilla bean lengthwise with the use of a sharp knife. Place it in a sterilized jar. Then, pour 3/4 cup of vodka or brandy. Move the bean around just to make sure that it is fully submerged in the alcohol. Seal it tightly and set it aside, preferably in a cool, dark area. Allow it to sit for four to six months, shaking the jar every once in a while throughout the time duration.

Vanilla extract has a lot of uses. It can be added to both savory and sweet dishes. There are many recipes that make use of it, including vanilla cupcakes, the Italian classic Tiramisu, meringue pies, and even hot drinks. When it comes to savory dishes, vanilla extract is typically added for food such as stews, like in beef stews or side dishes such as stewed apples.

Pure vanilla extract has a shelf life of around four to five years, given that it is tightly sealed and properly stored at room temperature.

Italian Bagel Chips

Italian bagel chips takes plain bagels and making them into something special. Add some wonderful seasoning and what seemed old and boring before has a whole new lift to it. Use these chips with a variety of dips and you'll please even the pickiest of eaters.

What you'll need:

- 6 plain bagels (thinly sliced)

- 4 Tbsp extra-virgin olive oil

- 1 glove garlic (minced)

- 1 Tbsp minced fresh rosemary

- 1/4 tsp sea salt

- 1/4 tsp black pepper

- 4 Tbsp freshly grated parmigiano-reggiano cheese

First, preheat your oven to 325 degrees F. Line 2 baking sheets with parchment paper.

Next place bagel slices in a single layer on the baking sheets. Make sure you don't double the slices up on the backing sheets, they won't bake properly. If needed, bake the bagel slices in batches.

In a small bowl, combine the olive oil, garlic, rosemary, salt and pepper. With a pastry brush, brush the tops of the bagel slices and top with a little sprinkling of the cheese.

All that's left is to bake these yummy Italian bagel chips for 15 to 20 minutes or until they become crisp and turn a golden brown color and the cheese has melted. Remove from the oven and let cool slightly. I like to cool them on cookie racks. You can serve them warm or make them ahead of time and store them in an airtight container.

This recipe makes 60 to 120 chips. Make more than you think you'll need as they disappear fast!

- 4 T gebhardt chili powder
- 1/2 T nm hot chile powder
- 1/2 T chimayo chile powder
- 1/2 T pasilla powder
- 3 1/2 T cumin
- 1 T granulated garlic
- 4 t onion powder
- 1/2 T brown sugar
- 1 t tabasco
- 8 oz tomato sauce
- 1/2 c green chiles, Canned 1 chopped

Directions:

- Brown meat and add to chili pot along with broths, tomato sauce, and
green chili's.
- Add 2/3 of the spices. Cook for 2 hr.
- Add remaining spices.
- Cook 1 hr or until meat is tender.
- Add salt to taste.

2. "To The Moon" Chili

Yield: 6 Servings

Ingredients:

- 1 lb beef,Ground
- 1 pk chili-o seasoning mix
- 1/2 c water
- 1 cn (14-1/2oz) whole tomatoes - cut up
- 1 cn (16oz) kidney beans, drained
- 1 T cayenne pepper sauce
- 1 red pepper, chopped, - optional
- 1 green onion,chopped, - optional
- 1 cheddar cheese, Shredded - optional

Directions:

- In a Dutch oven brown ground beef; drain.
- Stir in seasoning mix, water, tomatoes, beans and cayenne pepper sauce.
- Bring to a boil; reduce heat and simmer, cover, 10 minutes.
- Garnish with chopped red pepper, green onion and cheese, if desired.

3. "Weeknight Chili"

Yield: 4 Servings

Ingredients:

- 1 lb beef (or turkey (i mix) - Ground
- 1 it 1/2 & 1/2)
- 1 green bell pepper,chopped
- 1 cn (15 oz) red kidney beans
- 1 undrained
- 1 cn (8oz) tomato sauce
- 1 t white vinegar
- 2 T chili powder
- 2 T onion,Minced
- 1/4 t garlic salt
- 1 t sugar

Directions:

- In a 3 quart saucepan over medium-high heat, cook ground beef and bell pepper 6 minutes or until meat is no longer pink, stirring frequently. Drain excess fat.

- Stir in remaining ingredients. Bring to a boil. Reduce heat and simmer 20 minutes, stirring occasionally. If desired, top with chopped onion, shredded cheese or sour cream.

Old World American Italian Recipes Volume 1-5

The Appetizer:

STUFFED MUSHROOMS

16 large fresh mushrooms, 2 tbsp. sliced green onions, 2 tbsp. butter, 2 oz. cream cheese (or Neufchatel), 1 ½ tsp. mustard, 1 tsp. Worcestershire sauce, ¼ tsp. salt.

Remove stems from mushrooms and chop stems, Cook chopped stems and onions in butter until tender. Remove from heat. Combine cheese, mustard, Worcestershire sauce, and salt. Stuff mixture in mushrooms. Place on baking sheet and bake at 375 degrees for 8-10 minutes or until tender. Drain on paper towel and serve.

The Soup:

CHICKEN BROTH

1 (4lb.) chicken cleaned and left whole, 1 tsp. salt, 4 celery stalks, 2 carrots, 3 fresh tomatoes cut into pieces, 3 qts. water.

Place chicken in cold water. Add salt and bring to boil. Remove scum that forms on top of the water. Add celery, carrots, and tomatoes. Cover pan and cook for 1 ½ - 2 hours until chicken is tender. Add water if soup is too strong. Remove chicken and serve or chop chicken into the broth and strain.

The Main Dish:

ITALIAN STYLE BAKED CHICKEN

3 ½ lb. frying chicken, flour, 3 eggs, 2 tbsp. milk, 4 tbsp. romano cheese, 3 pieces of parsley, 3 cups of Italian bread crumbs, 6 tbsp. of cooking oil, 4 tbsp. of butter, salt, pepper.

Wash and dry chicken and dip into flour. Combine eggs, milk, cheese, salt, pepper, and parsley. Dip floured chicken into egg mixture and then into bread crumbs. Chop chicken into pieces. Pour oil into baking dish and place chicken pieces (skin side up) and butter it. Bake at 300 degrees for 1 ¼ hour.

The Bread:

ITALIAN PEPPER BREAD

1 ½ cups of hot water, 1 cup of warm water, 1 tsp. salt, 3 tbsp. sugar, 2 tbsp. bacon fat, 3 tbsp. sugar, 2 cakes of yeast, 1 or 2 eggs, 5 cups of flour, 2 tsp. ground pepper, ¼ cup of crushed bacon, 3 leaves of basil.

Combine the hot water, salt, 2 tbsp. sugar, and bacon fat. Let it cool. In the warm water, add 1 tbsp. sugar, and the yeast and stir until dissolved. Combine both mixtures and add the egg, flour, pepper and basil. Beat for 3 minutes until smooth. Stir in crumbled bacon. Cover batter and let rise until doubled. Stir down and beat for 2 minutes. Pour batter into 2 greased 8 x 4 inch loaf pans. Cover and let rise until batter is just barely to the top of pans. Bake at 400 degrees in ovcn for 40 minutes.

The Dessert:

WINE AND FRUIT TREAT

1/3 cup of orange juice, ¼ cup of port wine, 1 tbsp. sugar, 1 tbsp. lemon juice, 1 cup of sliced strawberries, 1 peach (peeled and sliced), 1 pear (peeled and sliced), 1 sliced banana.

Combine port wine, orange juice, sugar, and lemon juice. Place sliced fruits in a bowl. Pour juice over fruits and mix. Cover and chill.
