Try This Old Fashion Quick and Easy Comfort Food Meal Featuring a Tuna Casserole

These recipes are from my vintage recipe collection. They are quick, easy, and offer comfort to the family on a tight budget. Make your family this comfort food meal featuring Virginia's Macaroni Tuna Casserole, which has pasta, dairy, soup, tuna, and vegetables all in the one dish. For a different salad option make this Cabbage Salad with Cooked Dressing. Both of these recipes are from my childhood, growing up in Southern Indiana. We may not have been rich but we were always rich with lots of good food.

MACARONI TUNA CASSEROLE BY VIRGINIA

8 oz shell macaroni
1/2 cup shredded American cheese
1/2 can cream of celery soup
1 can chunk style tuna, drained
1 box frozen peas
1/4 cup butter
1/4 cup milk
2/3 cup crushed potato chips

Cook macaroni for 6 minutes after it begins to boil. Put frozen peas in a colander When the macaroni is cooked, drain by pouring the water over the frozen peas. Place both the macaroni and peas in a large bowl. Add the tuna, cream of celery soup, butter, milk, and cheese. Mix together well to combine. Place in a buttered casserole dish. Sprinkle top with crushed potato chips. Bake in a preheated 375 degree oven until heated through.

CABBAGE SALAD WITH COOKED DRESSING

1/2 cup sugar
1/4 tsp salt
1 tsp all-purpose flour
5 tbsp pineapple juice
3 tbsp cider vinegar

In a small saucepan, combine all the above ingredients. Bring to a boil over medium-high heat and boil for 5 minutes. Remove from heat and allow to cool.

1 small head of cabbage
1 cup miniature marshmallows
1/2 cup crushed pineapple, drained

Shred cabbage and pat dry with paper towels. Add the marshmallows and pineapple. Toss mixture with the cooled dressing until well coated.
